1 1/2 lb chicken breast (2 large, patted dry)
1 Tbsp olive oil
1 Tbsp parsley (to garnish, optional)
1/2 lemon (sliced for garnish, optional)
2 large eggs
1 garlic clove (minced)
1/2 tsp Italian seasoning
1/2 tsp salt
1/4 tsp ground black pepper
1 cup Parmesan cheese (grated)
3 Tbsp all-purpose flour
8 Tbsp unsalted butter
2 garlic cloves (minced)
1/4 cup lemon juice
1/4 cup chicken broth
1/4 tsp ground black pepper
Instructions
Cut the chicken breasts in half lengthwise and pat them dry.
Use a meat mallet to gently pound the chicken until it’s evenly thick.
In a bowl, whisk together the eggs, one clove of minced garlic, Italian seasoning, salt, and black pepper.
In another bowl, combine the grated Parmesan cheese with the all-purpose flour.
Dip each piece of chicken into the egg mixture, then dredge it in the Parmesan mixture to create a nice coating.
Heat olive oil in a large non-stick skillet over medium-high heat. Add the chicken in a single layer and cook for about 4-5 minutes on each side until golden brown and the chicken reaches an internal temperature of 165°F.
In a separate saucepan, melt the butter over medium heat. Add the minced garlic and sauté until fragrant.
Pour in the chicken broth and lemon juice, adding a pinch of black pepper. Allow it to simmer for about 2 minutes.
Drizzle the lemon butter sauce over the chicken, turning to coat evenly.
Garnish with lemon slices and parsley, then serve immediately.
