Ingredients
Scale
1 1/2 lb chicken breast (2 large, patted dry with paper towels)
1 Tbsp olive oil (to sauté)
1 Tbsp parsley (to garnish, optional)
1/2 lemon (sliced for garnish, optional)
2 large eggs
1 garlic clove (minced)
1/2 tsp Italian seasoning
1/2 tsp salt
1/4 tsp ground black pepper
1 cup Parmesan cheese (grated)
3 Tbsp all-purpose flour
8 Tbsp unsalted butter
2 garlic cloves (minced)
1/4 cup lemon juice
1/4 cup chicken broth
1/4 tsp ground black pepper
Instructions
Prep Chicken: Start by cutting the chicken breasts in half lengthwise. Pound them to an even thickness for seamless cooking.
Make Egg Mixture: In a bowl, whisk together the eggs, minced garlic, Italian seasoning, salt, and black pepper until well combined.
Create Parmesan Mixture: In another bowl, mix the grated Parmesan cheese with the flour to form a dredging mix.
Dredge Chicken: Take each piece of chicken, dip it into the egg mixture, then coat it evenly with the Parmesan mix.
Cook Chicken: In a skillet, heat the olive oil over medium heat. Cook the chicken for 4-5 minutes per side, until golden brown and cooked through.
Prepare Sauce: In a saucepan, melt the unsalted butter over medium heat. Add in the minced garlic and sauté until fragrant. Pour in the chicken broth, lemon juice, and black pepper, then let it simmer for about 2 minutes.
Combine and Serve: Arrange the chicken on a serving platter and pour the lemon butter sauce over the top. Garnish with lemon slices and parsley, if desired.
