Creamy and flavorful Loaded Mashed Potatoes topped with crispy bacon, rich cheese, and green onions, perfect for any gathering.

Ingredients

  • 2 pounds of potatoes
  • 4 slices of bacon
  • 1 cup of shredded cheese (cheddar or your choice)
  • 1/2 cup of sour cream
  • 1/4 cup of green onions, chopped
  • Salt and pepper to taste
  • Butter (optional, for creaminess)

Instructions

  1. Peel and cut the potatoes into evenly sized chunks. Place them in a pot and cover with cold water, adding a generous pinch of salt. Bring to a simmer and cook until fork-tender, about 12–15 minutes.
  2. While the potatoes are cooking, heat a skillet over medium heat and fry the bacon until it’s crisp. Drain on paper towels and chop it into bits.
  3. Drain the cooked potatoes and return them to the pot. Allow them to steam for a minute to remove excess moisture.
  4. Begin mashing the potatoes. For extra creaminess, add in some butter along with the sour cream. Season generously with salt and pepper.
  5. Fold in the chopped bacon, shredded cheese, and green onions. Stir gently until the cheese melts into the warm mash.
  6. Taste and adjust your seasoning if needed. Serve warm with a sprinkle of extra cheese or green onions on top if desired.

Notes

Swap cheese for your favorite variety or use turkey bacon for a lighter twist. Store leftovers in an airtight container for 3-5 days.
