A comforting and hearty loaded potato taco bowl featuring roasted potatoes, seasoned meat, fresh veggies, and customizable toppings.

Ingredients

  • 4 medium potatoes, diced
  • 1 lb ground beef or turkey
  • 1 tablespoon taco seasoning
  • 1 cup black beans, drained and rinsed
  • 1 cup corn kernels
  • 1 cup diced avocado
  • 1 cup diced tomatoes
  • 1/2 cup shredded cheese
  • Sour cream
  • Salsa
  • Olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Toss the diced potatoes with olive oil, salt, and pepper.
  3. Spread the potatoes on a baking sheet in a single layer.
  4. Roast the potatoes for 25-30 minutes until golden and crispy, stirring halfway through.
  5. Cook the ground beef or turkey in a skillet over medium heat until browned, then add taco seasoning.
  6. Layer the roasted potatoes, cooked meat, black beans, corn, diced avocado, and fresh tomatoes in serving bowls.
  7. Top with shredded cheese, sour cream, and salsa. Serve immediately and enjoy!
