A delightful and easy-to-make breakfast casserole packed with flavors from sausage, ham, bacon, and cheesy goodness, perfect for brunch gatherings.

  • 32 ounces Frozen Tater Tots (Extra crispy varieties recommended)
  • 1 pound Breakfast Sausage (or Italian sausage)
  • 1 cup Diced Ham (Any cooked ham)
  • 1 cup Crumbled Bacon (Turkey bacon is a lighter option)
  • 2 cups Shredded Cheddar Cheese (Other cheese varieties can be used)
  • 6 large Eggs (Fresh eggs recommended)
  • 1 cup Milk (Almond or oat milk can substitute)
  • 1 teaspoon Salt
  • 1 teaspoon Pepper
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Onion Powder
  • 1/4 cup Diced Green Onions (Can be replaced with chives or parsley)
  • 1 cup Additional Shredded Cheese (Any cheese blend can be used)
  • Optional Toppings: extra green onions, sour cream, or hot sauce

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet, cook the breakfast sausage over medium heat until browned. Drain excess fat if necessary.
  3. In a large bowl, whisk together the eggs, milk, salt, pepper, garlic powder, and onion powder until combined.
  4. In a greased 9×13 inch baking dish, layer the frozen tater tots evenly across the bottom.
  5. Spread the cooked sausage, diced ham, and crumbled bacon over the tater tots.
  6. Pour the egg mixture over the meats and tater tots, ensuring everything is evenly covered.
  7. Sprinkle the shredded cheddar cheese over the top, followed by a layer of additional cheese.
  8. Bake in the preheated oven for 35-40 minutes or until the eggs are set and the top is golden brown.
  9. Once ready, remove from the oven and allow it to cool for a few minutes. Top with diced green onions before serving.

For best results, use extra crispy tater tots and feel free to customize the meats based on what you have on hand.
