Ingredients

Scale
  • 2 large Boneless Skinless Chicken Breasts
  • 1/4 cup Ranch Dressing (for marination)
  • 1/2 cup Ranch Dressing (for topping)
  • 1/4 cup Italian Dressing
  • 1 tsp Garlic Powder
  • 1 tsp Onion Powder
  • 1 tsp Dried Basil
  • 1 tsp Black Pepper
  • 2.5 oz Shredded Parmesan Cheese
  • 1 cup Italian Style Panko Breadcrumbs
  • 1 cup Grated Parmesan Cheese
  • 4 tbsp Unsalted Butter (Melted)
  • 1 tsp Avocado Oil
  • 4 slices Provolone Cheese

Instructions

  1. Prep the chicken: Marinate the chicken breasts in a bowl with 1/4 cup ranch dressing and Italian dressing for at least 30 minutes.
  2. Preheat the oven: Set your oven to 400°F (200°C).
  3. Make the mixture: In a separate bowl, combine garlic powder, onion powder, dried basil, black pepper, shredded Parmesan, and panko breadcrumbs.
  4. Coat the chicken: Remove the chicken from the marinade, letting the excess drip off, then coat it thoroughly in the breadcrumb mixture.
  5. Prepare the baking dish: Place the coated chicken in a greased baking dish and drizzle with the melted butter.
  6. Bake: Cook in the oven for 25-30 minutes or until the chicken reaches an internal temperature of 165°F (75°C). About five minutes before it’s finished, top with provolone cheese.
  7. Serve: Let the chicken rest for a few minutes before slicing and serving.

Notes

Brine the chicken for extra juiciness and consider using gluten-free breadcrumbs as an alternative.
