Ingredients
Scale
2 large Boneless Skinless Chicken Breasts
1/4 cup Ranch Dressing (for marination)
1/2 cup Ranch Dressing (for topping)
1/4 cup Italian Dressing
1 tsp Garlic Powder
1 tsp Onion Powder
1 tsp Dried Basil
1 tsp Black Pepper
2.5 oz Shredded Parmesan Cheese
1 cup Italian Style Panko Breadcrumbs
1 cup Grated Parmesan Cheese
4 tbsp Unsalted Butter (Melted)
1 tsp Avocado Oil
4 slices Provolone Cheese
Instructions
Prep the chicken: Marinate the chicken breasts in a bowl with 1/4 cup ranch dressing and Italian dressing for at least 30 minutes.
Preheat the oven: Set your oven to 400°F (200°C).
Make the mixture: In a separate bowl, combine garlic powder, onion powder, dried basil, black pepper, shredded Parmesan, and panko breadcrumbs.
Coat the chicken: Remove the chicken from the marinade, letting the excess drip off, then coat it thoroughly in the breadcrumb mixture.
Prepare the baking dish: Place the coated chicken in a greased baking dish and drizzle with the melted butter.
Bake: Cook in the oven for 25-30 minutes or until the chicken reaches an internal temperature of 165°F (75°C). About five minutes before it’s finished, top with provolone cheese.
Serve: Let the chicken rest for a few minutes before slicing and serving.
Notes
Brine the chicken for extra juiciness and consider using gluten-free breadcrumbs as an alternative.
