A delightful, crispy, cheesy chicken dish inspired by the popular restaurant favorite, perfect for a weeknight dinner.

  • 4 boneless, skinless chicken breasts (about 6 ounces each)
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup panko breadcrumbs
  • 1/3 cup grated Parmesan cheese
  • 1/3 cup shredded mozzarella cheese
  • 2 tablespoons unsalted butter, melted
  • 1 tablespoon mayonnaise
  • 1 teaspoon dried parsley
  • 1/2 teaspoon garlic powder
  • Fresh parsley, chopped, for garnish
  • Lemon wedges, for serving

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Prepare the Chicken: In a small bowl, mix together olive oil, 1 teaspoon garlic powder, onion powder, smoked paprika, salt, and black pepper. Rub this mixture all over the chicken breasts.
  3. Sear the Chicken: Heat a skillet over medium heat and add the seasoned chicken. Sear for about 4-5 minutes on each side until they turn golden brown.
  4. Make the Topping: In another bowl, combine panko breadcrumbs, Parmesan cheese, mozzarella cheese, melted butter, mayonnaise, dried parsley, and the remaining 1/2 teaspoon garlic powder.
  5. Bake: Place the seared chicken in a baking dish and generously spread the cheese mixture on top. Bake for approximately 20-25 minutes, or until the chicken reaches an internal temperature of 165°F (75°C).
  6. Serve: Garnish with fresh parsley and serve with lemon wedges for an extra burst of flavor.

Notes

Can substitute the cheeses for cheddar or gouda for a twist. Leftovers can be stored in the refrigerator for up to 3 days.
