A hearty and comforting breakfast casserole packed with eggs, meat, cheese, and veggies, perfect for busy mornings or festive brunches.

Ingredients

Scale
  • 6 eggs
  • 2 cups milk
  • 1 cup shredded cheese
  • 1 loaf bread, cubed
  • 1 pound cooked sausage or bacon, crumbled
  • 1 cup chopped vegetables (e.g., bell peppers, onions, spinach)
  • Salt and pepper to taste
  • Optional: herbs and spices (e.g., thyme, paprika)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Whisk together the eggs and milk in a large mixing bowl. Season generously with salt and pepper.
  3. Grease a baking dish to avoid sticking.
  4. Layer the bread cubes at the bottom of the dish.
  5. Sprinkle the crumbled sausage or bacon over the bread, followed by the chopped vegetables.
  6. Pour the egg mixture evenly over the layers.
  7. Finish off with a generous sprinkle of shredded cheese on top.
  8. Cover the dish with foil. Refrigerate overnight or bake immediately.
  9. Bake covered for 30 minutes.
  10. Uncover and continue baking for an additional 15-20 minutes, until the casserole is set and golden brown.
  11. Serve warm and enjoy!

Notes

For extra convenience, chop your veggies and crumbled sausage the night before. Letting the casserole rest before baking allows the bread to soak up the egg mixture for a creamier texture.
