Ingredients

  • 6 large eggs
  • 6 strips of bacon
  • 2 cups seasoned potatoes

  • Salt to taste

Instructions

  1. Cook the bacon in a skillet over medium heat until crispy.
  2. Set the bacon aside on paper towels to drain.
  3. Scramble the eggs seasoned with salt and pepper until just set.
  4. Toss in your seasoned potatoes and cook until golden and crispy.
  5. Fill the tortillas with cooked potatoes, scrambled eggs, bacon pieces, and cheese.
  6. Roll each tortilla tightly, folding in the edges to secure the filling.
  7. Wrap each burrito in foil or plastic wrap.
  8. Place wrapped burritos in the freezer for future breakfasts.
  9. Microwave a burrito for 1-2 minutes until heated through before serving.
