Delightful muffin-style pancakes that combine sweet maple syrup with crispy bacon, perfect for a quick breakfast.

Ingredients

  • 1 cup pancake mix
  • 1/2 cup milk
  • 1 egg
  • 1/4 cup maple syrup
  • 1/2 cup cooked and crumbled bacon
  • 1/4 cup chopped pecans (optional)
  • 1/2 teaspoon vanilla extract
  • Cooking spray

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a muffin tin with cooking spray.
  2. Mix together the pancake mix, milk, egg, maple syrup, and vanilla extract until just combined.
  3. Fold in the cooked and crumbled bacon, as well as the chopped pecans if you’re using them.
  4. Divide the batter evenly among the muffin cups, filling each about two-thirds full.
  5. Bake in the preheated oven for 15-20 minutes, or until a toothpick comes out clean.
  6. Let the muffins cool slightly in the tin before removing them. Enjoy!

Notes

Serve warm and drizzle with extra maple syrup. Pairs well with fresh fruit.
