A magical dish with creamy texture, sun-dried tomatoes, and fresh spinach that captivates everyone.

  • 4 chicken breasts
  • 1 cup sun-dried tomatoes, chopped
  • 2 cups fresh spinach
  • 1 cup chicken broth
  • 1 cup heavy cream (or a lighter alternative)
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Parmesan cheese for topping (optional)

Instructions

  1. Heat the skillet: In a large skillet, warm the olive oil over medium heat.
  2. Season the chicken: Sprinkle salt and pepper on the chicken breasts before adding them to the skillet.
  3. Cook the chicken: Brown the chicken for about 6-7 minutes on each side until fully cooked. Once done, set the chicken aside.
  4. Sauté the garlic: In the same skillet, throw in the minced garlic until it’s fragrant.
  5. Add tomatoes and broth: Toss in the chopped sun-dried tomatoes and pour in the chicken broth. Bring everything to a gentle simmer.
  6. Stir in cream and spinach: Pour in the heavy cream and add the fresh spinach. Stir until the spinach wilts.
  7. Combine chicken and sauce: Return the chicken to the skillet and spoon that delicious sauce over it.
  8. Let it simmer: Allow everything to simmer together for a few minutes before serving hot, optionally topped with Parmesan cheese.

Notes

Serve over rice or with mashed potatoes. Store leftovers in an airtight container for 3-4 days.
