A romantic and creamy chicken dish made with sun-dried tomatoes and Parmesan, perfect for impressing loved ones with minimal effort.

  • 4 boneless, skinless chicken breasts
  • 2 tbsp olive oil
  • Salt and pepper, to taste
  • 1 tsp Italian seasoning
  • 3 cloves garlic, minced
  • ½ cup sun-dried tomatoes (in oil), chopped
  • 1 cup chicken broth
  • ¾ cup heavy cream
  • ½ cup grated Parmesan cheese
  • ¼ tsp red pepper flakes (optional)
  • Fresh basil or parsley, for garnish

Instructions

  1. Season the chicken breasts with salt, pepper, and Italian seasoning. Heat olive oil over medium-high heat in a skillet. Add the chicken and sear for 4 to 5 minutes on each side until golden brown. Remove the chicken and set aside.
  2. In the same skillet, lower the heat slightly. Sauté the minced garlic and chopped sun-dried tomatoes for about one minute to release their aroma.
  3. Pour in the chicken broth and let it simmer for 2 to 3 minutes, allowing the flavors to meld.
  4. Stir in the heavy cream, grated Parmesan, and the optional red pepper flakes. Keep simmering until the sauce thickens slightly.
  5. Return the chicken to the skillet, spoon some sauce over it, and let it simmer for an additional 8 to 10 minutes, ensuring the chicken is thoroughly cooked.
  6. Garnish with fresh basil or parsley. Serve alongside pasta, mashed potatoes, or crusty bread to soak up that glorious sauce.

Notes

For a dairy-free version, substitute heavy cream with coconut cream and use nutritional yeast instead of Parmesan.
