A creamy, flavorful chicken dish with sun-dried tomatoes and Parmesan cheese that impresses for any occasion.

  • 3 large boneless skinless chicken breasts, sliced lengthwise into thin cutlets
  • ½ teaspoon salt
  • ¼ teaspoon ground black pepper
  • 6 tablespoons all-purpose flour
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 3 cloves garlic, minced
  • 1 cup chicken stock
  • 1 cup heavy cream
  • ½ cup grated Parmesan cheese
  • ⅓ cup sun-dried tomatoes, chopped
  • 1 tablespoon fresh basil leaves, chopped
  • 1 teaspoon chili flakes
  • ¼ teaspoon oregano
  • ¼ teaspoon thyme

Instructions

  1. Start by seasoning your chicken cutlets with salt and black pepper. Dredge each piece in flour, shaking off any excess.
  2. Heat olive oil in a large skillet over medium heat and melt the butter.
  3. Cook the chicken cutlets for 4-5 minutes on each side, or until they are golden brown and thoroughly cooked. Remove from the skillet and set aside.
  4. In the same skillet, sauté the minced garlic for about a minute until fragrant.
  5. Pour in the chicken stock and gently scrape up any browned bits from the bottom of the pan.
  6. Lower the heat and add the heavy cream and Parmesan cheese, stirring until combined. Simmer for a few minutes.
  7. Add chili flakes, oregano, and thyme; taste the sauce and adjust seasoning as needed.
  8. Stir in the chopped sun-dried tomatoes, then return the cooked chicken to the skillet. Let it simmer for a few more minutes until everything is warmed through.
  9. Garnish with freshly chopped basil leaves and serve hot over pasta or rice.

Notes

For juicier chicken, avoid overcooking. Consider adding lemon juice or Italian seasoning for extra flavor. Serve over rice or pasta for best results.
