A comforting one-skillet dish featuring tender chicken in a rich creamy sauce with sun-dried tomatoes and spinach, perfect for busy weeknights or romantic dinners.

Ingredients

  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1 cup sun-dried tomatoes, chopped
  • 1 cup spinach
  • 1 teaspoon Italian seasoning
  • Parmesan cheese, grated (for garnish)

Instructions

  1. Generously season the chicken breasts with salt and pepper.
  2. In a large skillet, heat the olive oil over medium-high heat.
  3. Add the chicken breasts to the skillet. Cook until golden brown on both sides, about 5-7 minutes. Remove the chicken and set aside.
  4. In the same skillet, add the minced garlic. Sauté for about 30 seconds, until fragrant.
  5. Pour in the chicken broth, bringing it to a gentle simmer.
  6. Stir in the heavy cream, chopped sun-dried tomatoes, spinach, and Italian seasoning.
  7. Return the chicken to the skillet. Let it simmer for an additional 10 minutes, or until the chicken is cooked through.
  8. Serve warm, garnished with a sprinkle of grated Parmesan cheese.

Notes

Store leftovers in airtight containers in the fridge for up to 3 days. Reheat on the stovetop over low heat, adding a splash of chicken broth or cream to loosen the sauce.
