  • 4 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1 cup chicken broth
  • 1/2 cup heavy cream
  • 1 cup sun-dried tomatoes, chopped
  • 1/2 cup grated Parmesan cheese
  • Fresh basil for garnish

Instructions

  1. Season the chicken breasts liberally with salt and pepper on both sides.
  2. Heat olive oil in a large skillet over medium heat until it shimmers.
  3. Place the seasoned chicken breasts in the skillet. Cook for 5-7 minutes on each side, until they are golden brown and fully cooked. Remove the chicken and set aside.
  4. In the same skillet, add minced garlic, dried thyme, and dried oregano. Sauté for about a minute until the garlic becomes fragrant.
  5. Pour in the chicken broth and bring the mixture to a gentle simmer.
  6. Stir in heavy cream, sun-dried tomatoes, and grated Parmesan cheese. Cook until the sauce thickens slightly.
  7. Return the chicken to the skillet, ensuring each piece is coated well in the creamy sauce.
  8. Garnish with fresh basil before serving hot.

For a lighter option, swap heavy cream with Greek yogurt. This dish pairs beautifully with crispy white wine.
