A delightful dish featuring juicy chicken breasts in a creamy sun-dried tomato and spinach sauce, perfect for any occasion.

  • 4 chicken breasts
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 1 cup sun-dried tomatoes, chopped
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon Italian seasoning
  • 1 cup spinach, chopped
  • Parmesan cheese, for serving

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Season the chicken breasts with salt, pepper, garlic powder, onion powder, and Italian seasoning.
  3. Heat the olive oil in a large skillet over medium heat.
  4. Sear the chicken breasts for 3-4 minutes on each side until they are golden brown.
  5. Remove the chicken from the skillet and set it aside.
  6. Add the chopped sun-dried tomatoes to the same skillet and cook for 1-2 minutes.
  7. Pour in the chicken broth and heavy cream, stirring to bring it to a gentle simmer.
  8. Add the chopped spinach, stirring until it wilts.
  9. Return the chicken to the skillet, spooning the sauce over each piece.
  10. Transfer the skillet to the preheated oven and bake for 20-25 minutes or until the chicken is cooked through.
  11. Serve topped with grated Parmesan cheese.

Notes

For extra flavor, consider marinating the chicken in the seasoning for a couple of hours before cooking. Serve with garlic bread or over pasta for a complete meal.
