A delectable chicken dish with a creamy sun-dried tomato sauce, perfect for intimate dinners or busy weeknights.

  • 1 tbsp smoked sweet paprika
  • 1 tbsp Italian seasoning
  • 1 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp sun-dried tomato oil (from the jar)
  • 1 tbsp olive oil
  • 2 tbsp dried shallots
  • 1 tbsp minced onion
  • 1/2 cup sun-dried tomatoes
  • 2 tbsp tomato paste
  • 1/2 tsp smoked sweet paprika
  • 1 tsp garlic powder
  • 1/2 tsp salt
  • 1 tsp dried basil
  • 1/3 cup chicken broth
  • 1 1/4 cup heavy cream
  • 1/2 cup Parmesan cheese
  • Fresh basil

Instructions

  1. Begin by washing the chicken thighs and patting them dry with paper towels.
  2. In a medium bowl, combine the chicken with smoked sweet paprika, Italian seasoning, salt, and black pepper until well coated.
  3. Heat the sun-dried tomato oil and olive oil in a large skillet over medium heat.
  4. Sear the chicken thighs for about 4 to 5 minutes on each side until they develop a golden color. Transfer them to a plate once done.
  5. In the same skillet, add the sun-dried tomatoes, shallots, minced onion, and the remaining spices. Stir well, then reduce the heat to medium-low.
  6. Pour in the heavy cream, chicken broth, tomato paste, and Parmesan cheese. Stir until melted and well combined.
  7. Return the chicken thighs to the skillet, allowing them to simmer for an additional 5 to 10 minutes until they reach an internal temperature of 165°F, and the sauce thickens.
  8. Finally, top with freshly chopped basil and serve hot.

Notes

To avoid overcooking your chicken, use a meat thermometer to check the internal temperature. It should reach 165°F for safe consumption.
