  • 4 cloves fresh garlic, minced
  • ½ cup sun-dried tomatoes, chopped
  • 1 cup heavy cream
  • 1 cup low-sodium chicken broth
  • 1 tbsp dried Italian herbs (oregano, basil, thyme)
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C) and lightly spray a baking dish with nonstick cooking spray.
  2. Season both sides of the chicken breasts generously with salt and pepper. Place them in the prepared baking dish.
  3. Whisk together the heavy cream, chicken broth, minced garlic, sun-dried tomatoes, and dried Italian herbs until well combined.
  4. Pour this creamy sauce over the seasoned chicken breasts, ensuring they’re nicely coated.
  5. Bake for 25-30 minutes until the chicken reaches an internal temperature of 165°F (75°C).
  6. Let the dish rest for five minutes before serving. Drizzle extra sauce over the top and garnish with fresh parsley if desired.

For a lighter version, feel free to swap in dairy-free alternatives like almond or coconut cream. Boneless thighs can be a flavorful substitute for the chicken breasts.
