  • 1 lb chicken breast (sliced)
  • 1.25 cups heavy cream
  • 1 cup parmesan cheese (freshly grated)
  • Salt and pepper (to taste)
  • Optional: Spinach or mushrooms, red pepper flakes

Instructions

  1. Start by cooking the pasta according to the package instructions, but be sure to reserve some pasta water before draining.
  2. In a large pan, sear the sliced, seasoned chicken until it’s golden brown on both sides—this usually takes about 5-7 minutes.
  3. Without cleaning the pan, create your creamy sun-dried tomato sauce. Add the heavy cream, sun-dried tomatoes, and season to taste.
  4. Toss in the cooked pasta and chicken, mixing everything until it’s beautifully combined. If the sauce is too thick, add a splash of reserved pasta water to reach your desired consistency.

Notes

For the best taste, use freshly grated Parmesan cheese. Experiment with different vegetables or proteins to suit your taste.
