  • 8 ounces penne pasta
  • 1 cup heavy cream
  • 1 cup parmesan cheese
  • 2 cups spinach
  • 3 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Red pepper flakes (optional, for garnish)

Instructions

  1. Start by cooking the penne pasta according to package instructions. Once it’s done, drain the pasta and set it aside.
  2. In a large skillet, heat the olive oil over medium heat. Season the chicken breasts with salt and pepper on both sides before adding them to the skillet. Cook for about 5-7 minutes on each side until they’re golden brown and cooked through. Once done, remove the chicken and set it aside.
  3. In the same skillet, add the minced garlic and sauté for about a minute until fragrant.
  4. Pour in the heavy cream, then add the parmesan cheese, spinach, and Italian seasoning. Let the mixture cook until the spinach wilts and the sauce thickens slightly.
  5. Slice the chicken and return it to the skillet, mixing it well with the sauce.
  6. Finally, add the cooked penne pasta to the skillet, tossing everything together until well combined.
  7. Serve hot, garnished with red pepper flakes if desired.

Notes

For a lighter version, swap heavy cream for half-and-half or cashew cream. You can add sun-dried tomatoes or artichokes for extra flavor.
