  • 1 tablespoon olive oil
  • 1 teaspoon garlic, minced
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 cup sun-dried tomatoes
  • 1 cup spinach
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 8 oz pasta (fettuccine or your choice)
  • Parmesan cheese, grated for serving

Instructions

  1. Begin by cooking the pasta according to package instructions until al dente. Drain and set it aside.
  2. Heat olive oil in a large skillet over medium heat.
  3. Add minced garlic and sauté until fragrant—about 1 minute.
  4. Season chicken breasts with salt and pepper, then place them in the skillet.
  5. Sauté for 6-7 minutes per side until golden brown and cooked through. Remove chicken and slice into strips.
  6. In the same skillet, pour in heavy cream and chicken broth, then add sun-dried tomatoes, spinach, and Italian seasoning.
  7. Stir everything together, letting it simmer for a few minutes to wilt the spinach.
  8. Return sliced chicken to the skillet, gently combining all ingredients.
  9. Toss cooked pasta with the chicken and creamy sauce mixture until well coated.
  10. Serve hot and generously sprinkle with grated Parmesan cheese.

Notes

For a kick, consider adding red pepper flakes or balsamic vinegar. You can also use rotisserie chicken for a quicker meal.
