A delightful creamy pasta dish featuring seasoned chicken and sun-dried tomatoes, perfect for impressing special guests or enjoying a cozy family dinner.

Ingredients

  • 2 boneless, skinless chicken breasts
  • Salt and black pepper, to taste
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 cup sun-dried tomatoes, chopped
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 teaspoon Italian seasoning
  • ½ cup grated Parmesan cheese
  • 8 ounces of penne pasta
  • Fresh basil, for garnish

Instructions

  1. Gather all the ingredients. Chop the sun-dried tomatoes and mince the garlic.
  2. Cook the pasta: In a large pot of boiling salted water, cook the penne pasta according to the package directions until al dente. Drain and set aside.
  3. Season both sides of the chicken breasts with salt and black pepper.
  4. Heat the oil: In a large skillet, heat the olive oil over medium-high heat.
  5. Brown the chicken: Add the chicken breasts to the skillet and cook for about 6-7 minutes per side, or until fully cooked and golden brown. Once done, remove from the skillet and let rest.
  6. Sauté the garlic: In the same skillet, add the minced garlic and sauté for about 1 minute until fragrant.
  7. Add the chopped sun-dried tomatoes and cook for another minute.
  8. Make the sauce: Pour in the heavy cream, chicken broth, and Italian seasoning. Stir well and bring to a simmer.
  9. Incorporate the grated Parmesan cheese, stirring until melted and the sauce is smooth.
  10. Combine the cooked pasta in the skillet, ensuring it’s well-coated with the sauce.
  11. Slice the cooked chicken breasts and arrange them on top of the pasta.
  12. Garnish with fresh basil and more Parmesan cheese, if desired.

Notes

Serve garnished with fresh basil and extra Parmesan. Pairs well with a green salad and garlic bread.
