A delightful dish combining tender chicken cutlets with creamy sauce, sun-dried tomatoes, and perfectly cooked pasta. An ideal meal for family dinners or date nights.

  • 1 lb boneless, skinless chicken breasts (sliced horizontally into thin cutlets)
  • 8 oz pasta (such as rigatoni, penne, or fusilli)
  • 1 tbsp olive oil
  • 4 cloves garlic (minced)
  • 1/2 cup chicken broth (low sodium)
  • 1 cup heavy cream
  • 1/2 cup sun-dried tomatoes in oil (drained and chopped)
  • 1/2 cup parmesan cheese (freshly grated)
  • 1 tsp Italian seasoning
  • 1/4 tsp red pepper flakes (or more, to taste)
  • Salt and freshly ground black pepper (to taste)
  • 1/4 cup fresh basil (chopped, for garnish)

Instructions

  1. Boil the Pasta: Bring a large pot of salted water to a boil. Cook the pasta according to the package instructions until al dente, then drain, reserving about 1/2 cup of pasta water.
  2. Prepare the Chicken: Pat the chicken breasts dry. Season both sides with salt, pepper, and half of the Italian seasoning.
  3. Sear the Chicken: In a large skillet over medium-high heat, heat the olive oil. Add the chicken and cook for 4-5 minutes on each side until golden brown and cooked through. Remove from the skillet and set aside.
  4. Sauté the Garlic: Reduce the heat to medium. Add the minced garlic to the skillet and cook for about 30 seconds until fragrant.
  5. Deglaze with Broth: Pour in the chicken broth, scraping any flavorful browned bits from the bottom of the pan. Let it simmer for about a minute.
  6. Make the Sauce: Stir in the heavy cream, remaining Italian seasoning, and red pepper flakes. Bring to a gentle simmer and cook for 3-4 minutes until the sauce thickens slightly.
  7. Add Tomatoes and Cheese: Mix in the chopped sun-dried tomatoes and freshly grated Parmesan cheese. Stir until the cheese melts and the sauce is smooth.
  8. Combine Chicken and Pasta: Slice the cooked chicken and return it to the skillet. Add the drained pasta and toss until well combined. If the sauce is too thick, add a splash of the reserved pasta water.
  9. Garnish and Serve: Top with fresh basil and serve immediately.

Notes

Consider adding sautéed spinach or kale for a healthy addition. Ensure chicken slices are even in thickness for uniform cooking.
