  • 8 oz dried pasta of choice
  • 1 Tablespoon olive oil
  • ½ cup onion, finely chopped
  • 34 cloves garlic, minced
  • 1 Tablespoon butter
  • 1 pound chicken breasts, cut into bite-sized pieces
  • ½ teaspoon EACH of Italian seasoning, smoked paprika, red pepper flakes, garlic powder, salt, pepper
  • 1 cup heavy cream
  • ½ cup parmesan cheese, grated
  • ½ cup sun-dried tomatoes, chopped
  • Fresh basil leaves for garnish

Instructions

  1. Start by cooking the dried pasta according to the package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat the olive oil and butter over medium heat until melted.
  3. Add in the finely chopped onion and minced garlic. Stir them together for a few minutes, allowing them to soften and become fragrant.
  4. Toss in the bite-sized chicken pieces. Season them with Italian seasoning, smoked paprika, red pepper flakes, garlic powder, along with salt and pepper. Cook until the chicken is browned and cooked through.
  5. Lower the heat to low, then pour in the heavy cream and add the grated parmesan cheese. Stir until the cheese melts and the sauce thickens slightly.
  6. Mix in the chopped sun-dried tomatoes for an extra burst of flavor and bright color.
  7. Combine the cooked pasta with the sauce, ensuring every piece is well-coated.
  8. Finish off with a garnish of fresh basil leaves before serving your dish.

Notes

For a hint of sweetness, consider adding a splash of balsamic vinegar when serving. If you want a bit of crunch, top with toasted pine nuts or walnuts.
