A creamy and comforting pasta dish featuring succulent chicken and sun-dried tomatoes, perfect for impressing guests or enjoying a cozy night in.

Ingredients

  • 12 oz pasta
  • 1.5 lbs chicken breasts
  • 3 garlic cloves, minced
  • 1 cup sun-dried tomatoes
  • 1.5 cups heavy cream
  • 1/2 cup chicken broth
  • 1 tsp Italian seasoning
  • 1/2 cup grated Parmesan
  • 2 tbsp olive oil
  • Salt
  • Pepper
  • Red pepper flakes

Instructions

  1. Cook the pasta in salted water until al dente, then drain and reserve ½ cup of pasta water.
  2. Sear the chicken in olive oil, seasoning with salt, pepper, and Italian seasoning until golden brown, about 5-6 minutes per side.
  3. Build the sauce by sautéing garlic and sun-dried tomatoes in the same skillet, then adding chicken broth, heavy cream, and Parmesan.
  4. Combine the chicken with the creamy sauce and add the cooked pasta, tossing to coat. Add reserved pasta water if needed to loosen the sauce.

Notes

For a low-carb version, consider using zucchini noodles instead of pasta. Save extra sun-dried tomatoes for garnish.
