A comforting pasta dish featuring succulent chicken in a creamy garlic sauce that’s perfect for weeknights or date nights.

Ingredients

  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 4 cloves fresh garlic, minced
  • 8 oz fettuccine or penne pasta
  • 1 cup heavy cream
  • 1 cup low-sodium chicken broth
  • ½ cup freshly grated Parmesan cheese
  • 2 tsp fresh thyme, chopped
  • 2 tsp fresh basil, chopped
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Generously season the chicken breasts with salt and pepper.
  2. Heat the olive oil in a large skillet over medium-high heat. Cook the chicken for about 6 minutes on each side, or until golden brown. Remove chicken from the skillet and set aside.
  3. In the same skillet, sauté the minced garlic for around 1 minute until fragrant.
  4. Add chicken broth and heavy cream to the skillet, scraping up the tasty browned bits from the bottom.
  5. Stir in Parmesan cheese, thyme, and basil; let the mixture simmer for about 3 minutes until slightly thickened.
  6. Meanwhile, cook the pasta according to package instructions until al dente. Drain well.
  7. Return the cooked pasta and the reserved chicken to the skillet, and gently toss everything to coat with the creamy sauce.
  8. Serve immediately, garnished with extra herbs or cheese if desired.

Notes

Use fresh herbs for vibrant flavor. Store leftovers in an airtight container for up to 3 days.
