  • 2 chicken breasts
  • 8 oz pasta (e.g., penne or fettuccine)
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 cup cherry tomatoes, halved
  • 1 cup heavy cream
  • 1/2 cup grated parmesan cheese
  • 1/2 cup white wine
  • Salt and pepper to taste
  • Basil leaves for garnish

Instructions

  1. Start by cooking the pasta according to the package instructions. Once done, drain and set it aside.
  2. In a large skillet, heat the olive oil over medium heat.
  3. Season the chicken breasts generously with salt and pepper. Add them to the skillet and cook for about 6-7 minutes per side until they are golden brown and cooked through. Remove the chicken from the skillet and rest it on a plate.
  4. In that same skillet, add the minced garlic and sauté until fragrant, around 1 minute.
  5. Toss in the halved cherry tomatoes, cooking them for 3-4 minutes until softened.
  6. Pour in the white wine and let it simmer for about 2 minutes, allowing the alcohol to cook off.
  7. Lower the heat and stir in the heavy cream and grated parmesan cheese until the sauce is smooth and creamy.
  8. Return the cooked pasta and chicken to the skillet, tossing everything gently to coat in that rich, luscious sauce.
  9. Serve hot, garnished with fresh basil leaves for the finishing touch.

Notes

For a lighter version, substitute the heavy cream for Greek yogurt or a low-fat alternative. Add sautéed spinach or kale for more color and nutrition, or some red pepper flakes for heat.
