Ingredients

Scale
  • 4 boneless, skinless chicken breasts
  • 1 tbsp olive oil
  • 1 tbsp butter
  • Salt and pepper (to taste)
  • 1 tsp garlic powder
  • 1 tsp dried oregano
  • 1/2 cup sun-dried tomatoes (packed in oil, drained and chopped)
  • 2 cloves garlic (minced)
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/4 cup grated Parmesan cheese
  • 1/2 tsp crushed red pepper flakes (optional)
  • 1 tbsp fresh basil (chopped, for garnish)
  • 1 tbsp fresh parsley (chopped, for garnish)
  • 1 package (about 15 oz) refrigerated or frozen ravioli (cheese or spinach)
  • Salt (for boiling water)

Instructions

  1. Season both sides of the chicken breasts with salt, pepper, garlic powder, and dried oregano.
  2. Sauté the chicken in a large skillet with olive oil and butter over medium-high heat for 6-7 minutes on each side until golden brown.
  3. Make the sauce in the same skillet by adding the sun-dried tomatoes and minced garlic, sautéing for 1-2 minutes, and then stirring in the heavy cream, chicken broth, and grated Parmesan. Simmer for 5-7 minutes.
  4. Add crushed red pepper flakes if desired, return the chicken to the skillet, and simmer for an additional 5 minutes.
  5. Cook the ravioli in a separate pot of salted boiling water according to package instructions (typically 3-5 minutes), then drain.
  6. Serve by placing ravioli on plates, topping with chicken and sauce, and garnishing with fresh basil and parsley.
