  • ½ teaspoon kosher salt
  • ½ teaspoon black pepper
  • 1 ½ teaspoon Italian seasoning
  • 1 teaspoon smoked paprika
  • 2 tablespoons all-purpose flour
  • 1 tablespoon butter
  • 2 tablespoons extra-virgin olive oil, divided
  • 1 shallot, minced
  • 4 cloves garlic, minced
  • ¼ teaspoon red pepper flakes
  • ¼ cup sun-dried tomatoes in oil, finely chopped
  • ¼ cup (3 oz) tomato paste
  • 2 cups chicken broth
  • 1 lb (16 oz) cheese tortellini
  • 1 cup heavy cream
  • 3 cups spinach, roughly chopped
  • ½ cup parmesan cheese, freshly grated
  • Fresh basil, for serving
  • Black pepper, for serving
  • Red pepper flakes, for serving
  • Parmesan, for serving

Instructions

  1. Cube the chicken: Cut the chicken into 1-inch chunks, season with kosher salt, black pepper, Italian seasoning, and smoked paprika, tossing to coat evenly. Sprinkle the flour over the chicken and toss again until lightly coated.
  2. Sear the chicken: In a large skillet, heat the butter with 1 tablespoon of olive oil over medium heat. Lay the chicken in the pan in an even layer, cooking until browned and cooked through, about 6-8 minutes. Remove from the skillet and set aside.
  3. Build the flavor: In the same skillet, add the remaining tablespoon of olive oil. Sauté the minced garlic, shallot, and chopped sun-dried tomatoes for about 3 minutes until fragrant.
  4. Create the sauce: Add the red pepper flakes, season with additional salt and black pepper, then stir in the tomato paste and chicken broth, scraping up any browned bits from the skillet.
  5. Simmer with tortellini: Bring the mixture to a gentle simmer before adding the tortellini. Cover and let simmer for 3-4 minutes, stirring halfway through, until the tortellini is tender.
  6. Combine everything: Stir the cooked chicken back into the skillet along with the chopped spinach, heavy cream, and grated parmesan, mixing until well combined and heated through.
  7. Serve it up: Serve hot, garnished with fresh basil, additional grated parmesan, and a sprinkle of cracked black pepper.
