A creamy and flavorful chicken recipe with sun-dried tomatoes and parmesan cheese, perfect for weeknight dinners and meal prep.

  • 1 cup heavy cream
  • 1 cup sun-dried tomatoes
  • 1 cup grated parmesan cheese
  • 2 cloves garlic, minced
  • 1 teaspoon dried Italian herbs
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Fresh basil for garnish (optional)

Instructions

  1. Heat the olive oil in a large skillet over medium heat.
  2. Season the chicken breasts with salt and pepper, then add them to the skillet. Cook until browned on both sides, about 5-7 minutes. Remove the chicken and set it aside.
  3. In the same skillet, add the minced garlic and sun-dried tomatoes. Sauté for 1-2 minutes until fragrant.
  4. Pour in the heavy cream and bring it to a gentle simmer.
  5. Stir in the grated parmesan cheese and dried Italian herbs until combined.
  6. Return the chicken to the skillet and let it simmer for an additional 10-15 minutes, ensuring the chicken is cooked through.
  7. Garnish with fresh basil if desired, and serve over pasta, rice, or with crusty bread.

Notes

Don’t overcrowd the pan while searing the chicken. Adjust herbs according to taste. Allow chicken to rest after cooking for better tenderness.
