A hearty and delicious breakfast casserole made with crispy hash browns, savory sausage, and creamy cheese, perfect for brunch gatherings or meal prep.

  • 1 package (about 24 oz) frozen hash browns, thawed
  • 1 cup shredded cheddar cheese
  • ½ cup shredded mozzarella cheese
  • 1 cup cooked breakfast sausage or bacon pieces
  • 1 small onion, finely chopped
  • 1 red bell pepper, diced
  • 6 large eggs
  • 1 cup milk
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon garlic powder
  • 2 tablespoons butter for greasing the pan

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, mix the thawed hash browns until evenly combined.
  3. In a separate bowl, whisk together the eggs and milk until frothy.
  4. Combine the mixture by adding cooked sausage or bacon, onion, bell pepper, salt, black pepper, and garlic powder into the hash browns. Then, pour the egg mixture over this blend.
  5. Transfer everything into a greased baking dish, spreading it evenly.
  6. Sprinkle extra cheese on top.
  7. Bake in the preheated oven for 45-50 minutes, or until the eggs are set and the top is golden brown.
  8. Once baked, allow it to cool slightly before serving.
  9. Serve and enjoy!

Notes

Store leftovers in an airtight container in the fridge for up to 3-4 days. Reheat in the oven at 350°F for about 20 minutes.
