Savory-sweet bite-sized treats that combine fluffy pancake batter, tender sausage, and melting cheese, all drizzled with rich maple syrup.

  • 2 cups complete pancake mix (just add water variety)
  • 1 ½ cups cold water
  • 1 pound ground breakfast sausage (cooked and crumbled)
  • 1 cup mild or sharp cheddar cheese (shredded)
  • ¼ cup pure maple syrup
  • Non-stick cooking spray (for greasing the tin)

Instructions

  1. Preheat your oven to 375°F (190°C). Coat a mini muffin tin thoroughly with non-stick cooking spray or use paper liners.
  2. In a skillet over medium-high heat, brown the ground breakfast sausage, breaking it into small crumbles. Drain any excess grease and set aside.
  3. In a large bowl, whisk together the pancake mix and cold water until there are no large lumps remaining.
  4. Stir in the maple syrup and your choice of shredded cheddar cheese until evenly mixed.
  5. Gently fold the cooked sausage crumbles into the batter using a spatula, ensuring it’s evenly distributed.
  6. Spoon the mixture into each muffin cup, filling them about three-quarters of the way to the top.
  7. Bake the bites for about 15-18 minutes, or until the tops are golden brown and a toothpick comes out clean.
  8. Allow the bites to rest in the pan for a few minutes before gently removing them to keep their shape.

Notes

For variations, consider adding cooked bacon bits or diced jalapeños for extra flavor. These bites freeze well too; just ensure they are cooled completely before storing.
