Easy and customizable breakfast sandwiches that can be made in advance and stored in the freezer for busy mornings.

Ingredients

  • English muffins
  • Eggs
  • Cheese slices
  • Cooked sausage or bacon
  • Salt
  • Pepper
  • Butter or oil

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a pan, cook the sausage or bacon over medium heat until browned and cooked through.
  3. In a separate bowl, whisk the eggs and season with salt and pepper.
  4. Scramble the eggs in another pan until fully cooked; set aside.
  5. Cut the English muffins in half and toast them lightly until golden.
  6. Assemble your sandwiches by placing a slice of cheese, a portion of cooked meat, and scrambled eggs between the muffin halves.
  7. Wrap each sandwich in foil or plastic wrap, then place them in the freezer.
  8. To reheat, simply unwrap and microwave for about 1-2 minutes, or until heated through.

Notes

These sandwiches can be customized with different meats, cheeses, and vegetables. For longer storage, keep them in the freezer and consume within 2 months.
