Ingredients

  • 1/4 cup feta cheese, crumbled
  • 1 medium tomato, diced
  • 1 cup fresh spinach, chopped
  • Salt and pepper to taste
  • 2 slices of whole grain bread or 1 bagel
  • 1 tablespoon olive oil

Instructions

  1. Heat olive oil in a skillet over medium heat.
  2. Whisk the eggs together with salt and pepper.
  3. Pour the eggs into the skillet and scramble until they reach your desired doneness.
  4. Toss in the chopped spinach and diced tomatoes; cook until the spinach is wilted and vibrant.
  5. Place the egg and veggie mixture onto one slice of bread or bagel.
  6. Sprinkle the crumbled feta cheese over everything, then cover with the other slice of bread or top with the other half of your bagel.
