A vibrant and flavorful Mediterranean Chicken Skillet dish that combines tender chicken thighs with colorful vegetables, ideal for weeknight dinners.

  • 4 boneless, skinless chicken thighs or breasts
  • 1 tbsp olive oil
  • 1 tsp smoked paprika
  • 1 tsp dried oregano
  • 1/2 tsp garlic powder
  • Salt and pepper, to taste
  • 1 red onion, sliced
  • 1 red bell pepper, sliced
  • 1 zucchini, sliced into half moons
  • 3 garlic cloves, minced
  • 1/4 cup sun-dried tomatoes, sliced
  • 1 cup cherry tomatoes, halved
  • 1/3 cup Kalamata olives, pitted and halved
  • 1/4 cup crumbled feta cheese
  • Juice of 1 lemon
  • Fresh parsley, for garnish

Instructions

  1. Pat the chicken dry and season both sides with smoked paprika, oregano, garlic powder, salt, and pepper.
  2. In a large skillet over medium-high heat, heat the olive oil. Sear the chicken for about 4–5 minutes on each side until it’s beautifully golden brown. Remove it from the skillet and set aside.
  3. Lower the heat to medium and add the sliced red onion, bell pepper, and zucchini to the same skillet. Cook for 3–4 minutes until they start to soften.
  4. Stir in the minced garlic, sun-dried tomatoes, cherry tomatoes, and olives. Cook for another 2 minutes to combine the flavors.
  5. Return the seared chicken to the skillet, pour in the fresh lemon juice, cover, and let it simmer for 5–7 minutes, until the chicken is fully cooked.
  6. Sprinkle crumbled feta over the top and garnish with fresh parsley. Serve warm and enjoy!
