A delightful dish combining tender chicken with vibrant zucchini, topped with melted cheese.

  • 1 ½ pounds boneless, skinless chicken breasts, cut into chunks
  • 3 medium zucchinis, sliced into rounds
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • Juice of 1 lemon
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ¾ cup shredded mozzarella or Italian cheese blend
  • ¼ cup grated Parmesan cheese
  • 2 tablespoons fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, combine the chicken chunks and zucchini slices.
  3. Add the olive oil, minced garlic, lemon juice, oregano, basil, salt, and pepper. Toss until everything is well-coated.
  4. Spread the mixture evenly in a 9×13-inch baking dish.
  5. Generously sprinkle mozzarella and Parmesan over the top.
  6. Bake uncovered for 25-30 minutes, or until the chicken is fully cooked and the cheese is golden brown and bubbly.
  7. Once out of the oven, garnish with fresh parsley before serving.

Notes

Feel free to swap zucchini for other veggies like bell peppers or asparagus. For a cheese twist, mix in feta.
