A vibrant dish that combines angel hair pasta with marinated chicken, fresh vegetables, and crumbled feta cheese, all cooked in one pot for minimal cleanup.

  • 8 oz angel hair pasta
  • 1 lb juicy marinated chicken
  • 1 cup cherry tomatoes, halved
  • 4 cups fresh spinach
  • 1/2 cup olives
  • 2 tbsp lemon juice
  • 2 cloves garlic, minced
  • 1/2 cup feta cheese, crumbled

Instructions

  1. Bring a large pot of salted water to a boil. Add the angel hair and cook according to package instructions. Drain and set aside.
  2. Return the empty pot to medium-high heat. Add a splash of oil and the marinated chicken. Brown and cook thoroughly for about 6–8 minutes.
  3. Lower the heat to medium, then add the minced garlic and halved cherry tomatoes. Sauté for 2–3 minutes, until the tomatoes soften.
  4. Add the spinach and olives, stirring until the spinach wilts (about 1–2 minutes).
  5. Return the cooked angel hair to the pot. Squeeze in fresh lemon juice and sprinkle crumbled feta on top. Toss gently until well combined.
  6. Serve warm and enjoy!

Notes

For deeper flavors, marinate the chicken overnight. Be mindful of pasta cooking time, as angel hair cooks quickly.
