Delightful mini meatloafs made with ground beef, Ritz crackers, and cheddar cheese, topped with a sweet BBQ glaze.

Ingredients

  • 1 lb ground beef
  • 1 cup Ritz crackers, crushed
  • 1 cup cheddar cheese, shredded
  • 1/2 cup onion, diced
  • 1/2 cup milk
  • 1 egg
  • 1/2 cup BBQ sauce
  • 1/4 cup ketchup
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a sheet pan by lining it with parchment paper or lightly greasing it.
  2. In a large bowl, combine the ground beef, crushed Ritz crackers, shredded cheddar cheese, diced onion, milk, and egg. Season with salt and pepper. Mix gently until everything is just combined.
  3. Shape the mixture into small loaves and place them on the prepared sheet pan.
  4. In a separate small bowl, mix together the BBQ sauce and ketchup to create a glaze. Brush this mixture over the tops of each mini meatloaf.
  5. Bake in the preheated oven for 25-30 minutes, or until the internal temperature reaches 160°F (71°C).
  6. Once baked, let them rest for about 3-5 minutes, then serve warm and enjoy!

Notes

For added flavor, sauté the diced onion before mixing. Mix ingredients just until combined to maintain tenderness.
