Deliciously moist muffins made with applesauce and rolled oats, perfect for breakfast or a snack.

  • 1 cup all-purpose flour
  • 1 cup rolled oats
  • 1 cup applesauce
  • 1/2 cup brown sugar
  • 1/2 cup sugar
  • 1/4 cup vegetable oil
  • 2 large eggs
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp cinnamon
  • A pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C). Prepare a muffin tin with liners or give it a light grease.
  2. In a large bowl, mix together the flour, rolled oats, baking powder, baking soda, cinnamon, and salt.
  3. In a separate bowl, whisk together the applesauce, both sugars, vegetable oil, and eggs until smooth.
  4. Gently pour the wet ingredients into the dry ingredients. Stir until just combined; be careful not to overmix to maintain that delightful moist texture.
  5. Spoon the batter into the muffin tin, filling each cup about two-thirds full.
  6. Bake for 18-20 minutes. A toothpick inserted into the center should come out clean when they’re ready.
  7. Let the muffins cool in the tin for about 5 minutes before transferring them to a wire rack to cool completely.

Notes

For a healthier twist, feel free to substitute whole wheat flour or a sugar alternative. Oats can also be swapped with quick oats for a different texture.
