Delicious quesadillas filled with gooey mozzarella cheese and juicy blueberries, perfect for a quick and healthy breakfast.

  • 4 medium flour tortillas
  • 1 cup shredded mozzarella cheese (Monterey Jack is a substitute)
  • 1 cup fresh blueberries
  • 1 tablespoon butter (or olive oil for a healthier alternative)
  • 1 tablespoon honey (optional for drizzling)
  • Fresh cilantro (for garnish)

Instructions

  1. Heat a non-stick skillet over medium heat and add butter or olive oil to coat the bottom.
  2. Place a tortilla in the skillet. On one half, sprinkle a layer of shredded mozzarella cheese and fresh blueberries.
  3. Fold the tortilla in half to cover the filling. Cook for 2-3 minutes until golden brown and crispy on the bottom.
  4. Carefully flip the quesadilla and cook for an additional 2-3 minutes, until the cheese melts and the other side is golden brown.
  5. Remove from the skillet, let cool slightly, and drizzle with honey. Garnish with fresh cilantro before slicing into wedges.

Notes

For an extra crispy quesadilla, lightly spray the skillet with cooking oil before adding the tortilla.
