  • 2 boneless, skinless chicken breasts
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • 1 cup heavy cream
  • 1/2 cup fresh basil, chopped
  • 1 cup fresh mozzarella, sliced
  • 1 clove garlic, minced
  • 1 tablespoon Parmesan cheese, grated

Instructions

  1. Season the chicken breasts generously with salt and pepper on both sides.
  2. Heat the olive oil in a skillet over medium heat until shimmering.
  3. Cook the seasoned chicken for about 6-7 minutes on each side until golden brown and fully cooked. Remove the chicken from the skillet and keep it warm.
  4. Sauté the minced garlic in the same skillet for about a minute until fragrant.
  5. Pour in the heavy cream and bring it to a gentle simmer, stirring occasionally.
  6. Incorporate the chopped basil and grated Parmesan cheese, mixing well to combine all the flavors.
  7. Return the cooked chicken to the skillet, layering slices of fresh mozzarella on top.
  8. Cover and let simmer for 3-5 minutes until the cheese is melted and bubbly.
  9. Serve hot, and feel free to garnish with additional fresh basil if desired.

Notes

For a lighter version, substitute heavy cream with half-and-half. Add spinach for extra nutrition.
