Mushroom Stuffed Chicken Breast

A delightful dish combining tender chicken with a rich mushroom filling, perfect for a cozy dinner or family gathering.

  • 2 large chicken breasts
  • 2 cups mushrooms, finely chopped
  • 1 cup spinach, chopped (optional)
  • 1/2 cup cream cheese, softened
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • Olive oil for cooking
  • Fresh herbs (thyme or parsley) for garnish

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a pan over medium heat, pour in some olive oil. Add the chopped mushrooms and sauté for about 5-7 minutes until soft and browned.
  3. If using spinach, add it next, stirring well. Then, add garlic powder, onion powder, salt, and pepper. Mix in cream cheese until well combined.
  4. Butterfly the chicken breasts, season with salt and pepper, then stuff with the mushroom mixture. Secure with toothpicks if necessary.
  5. Sear the stuffed chicken in the same pan for 3-4 minutes on each side until golden brown.
  6. Transfer the chicken to a baking dish and bake for 20-25 minutes, or until the internal temperature reaches 165°F (75°C).
  7. Once cooked, let the chicken rest for 5 minutes before slicing. Garnish with fresh herbs and serve warm.

Notes

For a different flavor, try adding grated Parmesan or Italian seasoning to the stuffing. Store leftovers in an airtight container for up to 3 days in the refrigerator.
