Delightful no-bake cookies perfect for a nutritious breakfast or snack, made with wholesome ingredients.

Ingredients

  • 1 cup oats
  • 2/3 cup peanut butter
  • 1 1/2 Tbsp honey (or more to taste)
  • 2 Tbsp shredded coconut
  • 1/4 cup chopped walnuts
  • 1 Tbsp sunflower seeds
  • 2 Tbsp chopped chocolate
  • 1/2 tsp coconut oil

Instructions

  1. In a bowl, combine the peanut butter and honey until smooth.
  2. Stir in the oats, chopped walnuts, sunflower seeds, and shredded coconut until everything is well mixed.
  3. Using your hands, take about 1 1/2 tablespoons of the mixture and roll it into cookies or patties.
  4. In a small microwave-safe bowl, melt the chocolate with the coconut oil, heating in 15-30 second intervals, stirring until smooth.
  5. Drizzle the melted chocolate over the cookies in a zigzag pattern.
  6. Place the cookies in the refrigerator for at least 1 hour. Enjoy within 4-5 days when stored in the fridge.

Notes

Make sure your peanut butter is creamy for easier mixing. Feel free to experiment with different nuts or sweeteners.
