Deliciously fluffy old-fashioned pancakes that take you back to leisurely weekend mornings.

Ingredients

  • 1 cup all-purpose flour
  • 2 tablespoons sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup buttermilk
  • 1 large egg
  • 2 tablespoons melted butter
  • Extra butter or oil for cooking

Instructions

  1. Whisk together the flour, sugar, baking powder, baking soda, and salt in a large bowl until well combined.
  2. Mix the buttermilk, egg, and melted butter in another bowl until smooth.
  3. Pour the wet mixture into the dry ingredients. Gently stir until just combined—it’s okay if the batter remains a little lumpy.
  4. Preheat a non-stick skillet or griddle over medium heat. Coat the surface with a small amount of butter or oil.
  5. Pour 1/4 cup of batter onto the heated skillet for each pancake.
  6. Cook until bubbles form on the surface, then flip each pancake and cook until golden brown on the other side.
  7. Serve warm with syrup or your favorite toppings.

Notes

Use room temperature ingredients for fluffier pancakes. Don’t overmix the batter to avoid toughness.
