Delicious and fluffy old-fashioned pancakes perfect for breakfast or brunch, customizable with various mix-ins.

  • 2 tablespoons granulated sugar
  • 2 teaspoons baking powder
  • 1 pinch salt
  • 1 cup milk
  • 1 large egg
  • 2 tablespoons melted butter
  • 1 teaspoon vanilla extract
  • 1 cup blueberries (optional)
  • 1 cup chocolate chips (optional)
  • 1 teaspoon ground cinnamon
  • 1 ripe mashed banana (optional)

Instructions

  1. In a mixing bowl, whisk together the flour, sugar, baking powder, salt, and cinnamon until well combined.
  2. In another bowl, mix the milk, egg, melted butter, and vanilla extract until smooth.
  3. Pour the wet ingredients into the dry ingredients. Stir gently until just combined; it’s okay if there are a few lumps.
  4. If desired, fold in blueberries, chocolate chips, or the mashed banana for added flavor.
  5. Heat a non-stick skillet over medium heat and lightly grease it with butter.
  6. Pour 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles appear on the surface, then carefully flip and cook until golden brown.
  7. Repeat with the remaining batter, adjusting the heat as necessary to avoid burning.
  8. Serve warm with your favorite toppings like syrup, fresh fruit, or whipped cream.

Notes

Don’t overmix the batter; lumps are okay. Store leftovers in an airtight container in the fridge for 2-3 days or freeze them for longer storage.
