One-Pan Balsamic Chicken

A flavorful one-pan dish featuring succulent chicken breasts infused with tangy balsamic vinegar, honey, and garlic, paired with vibrant tomatoes and spinach.

Ingredients

  • 4 boneless, skinless chicken breasts
  • 1/2 cup balsamic vinegar
  • 1/4 cup olive oil
  • 2 tablespoons honey
  • 3 cloves garlic, minced
  • Salt and pepper, to taste
  • 1 cup cherry tomatoes, halved
  • 1 cup spinach
  • 1 teaspoon dried Italian herbs (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large mixing bowl, whisk together the balsamic vinegar, olive oil, honey, minced garlic, salt, and pepper until well combined.
  3. Add the chicken breasts to the bowl, making sure they are thoroughly coated in the marinade. Marinate for 15-30 minutes for maximum flavor.
  4. Transfer the marinated chicken breasts to a large oven-safe pan and pour any leftover marinade over them.
  5. Scatter the halved cherry tomatoes around the chicken in the pan.
  6. Bake in the preheated oven for 25-30 minutes or until the chicken is cooked through.
  7. In the last 5 minutes, add the spinach to the pan and allow it to wilt.
  8. Remove from the oven and serve warm, drizzling the delicious pan juices over the chicken.

Notes

Serve with rice or mashed potatoes to soak up the juices. You can also pair it with a fresh salad or crusty bread.
