One-Pan Juicy Chicken in Balsamic Sauce

A quick and impressive one-pan meal featuring succulent chicken breasts in tangy balsamic sauce, topped with cherry tomatoes and mozzarella cheese.

Ingredients

  • 4 boneless, skinless chicken breasts
  • 1/2 cup balsamic vinegar
  • 1 cup cherry tomatoes, halved
  • 1 cup mozzarella cheese, shredded
  • 1/4 cup fresh basil, chopped
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Heat olive oil in a large oven-safe skillet over medium heat. Season the chicken breasts with salt and pepper, and then add them to the skillet.
  3. Sear the chicken for 5-7 minutes on each side until golden brown.
  4. Pour balsamic vinegar over the chicken and bring to a simmer.
  5. Place halved cherry tomatoes on top of the chicken, finished with mozzarella cheese.
  6. Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the chicken is fully cooked and the cheese is bubbling and golden.
  7. Once out of the oven, garnish with fresh basil and serve immediately.

Notes

For a dairy-free option, swap the mozzarella for another cheese like feta. Leftovers can be stored in an airtight container for up to 3 days. Reheat gently to maintain moisture.
