This creamy, savory chicken dish combines sun-dried tomatoes and Parmesan for a flavor-packed meal that’s perfect for weeknight dinners or special occasions.

  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 2 tablespoons olive oil
  • Salt and freshly cracked black pepper to taste
  • 1 teaspoon Italian seasoning
  • 3 cloves garlic, minced
  • ⅔ cup sun-dried tomatoes in oil, drained and chopped
  • 1 cup heavy cream
  • ½ cup chicken broth
  • ½ cup freshly grated Parmesan cheese
  • 1 teaspoon red pepper flakes (optional)
  • Fresh basil leaves for garnish

Instructions

  1. Heat the olive oil in a large skillet over medium-high heat.
  2. Season the chicken breasts with salt, pepper, and Italian seasoning.
  3. Sear the chicken for about 5-6 minutes on each side until golden and cooked through. Remove the chicken from the skillet and set aside.
  4. In the same skillet, add the minced garlic and sauté for 30 seconds until fragrant.
  5. Stir in the chopped sun-dried tomatoes and cook for an additional minute.
  6. Pour in the heavy cream and chicken broth, gently simmering while scraping any tasty bits from the pan’s bottom.
  7. Add the Parmesan cheese until melted, returning the chicken to the pan to simmer for an additional 2-3 minutes. If desired, stir in red pepper flakes for a spicy kick.
  8. Serve the chicken topped with the creamy sauce and garnish with fresh basil leaves.

Notes

Leftovers should be stored in an airtight container in the refrigerator for 3-4 days. Reheat gently on the stovetop or microwave.
