One-Pan Teriyaki Chicken Stir Fry

A quick and easy one-pan teriyaki chicken stir fry packed with flavor and vegetables, ready in under 20 minutes.

Ingredients

  • 1 pound chicken breast, sliced
  • 2 cups mixed vegetables (bell peppers, broccoli, carrots, etc.)
  • 1/4 cup teriyaki sauce
  • 2 tablespoons olive oil
  • 1 teaspoon garlic, minced
  • 1 teaspoon ginger, minced
  • Salt and pepper to taste
  • Cooked rice or noodles for serving

Instructions

  1. Heat 2 tablespoons olive oil in a large skillet over medium heat until shimmering.
  2. Add 1 teaspoon minced garlic and 1 teaspoon minced ginger, and sauté for about 30 seconds until fragrant.
  3. Add the sliced chicken breast, season with salt and pepper, and cook for about 5–7 minutes until browned and cooked through.
  4. Push the chicken to the side, add 2 cups mixed vegetables, and cook for about 5 minutes until tender but still crisp.
  5. Pour 1/4 cup teriyaki sauce over the chicken and vegetables, stir to combine, and cook for 2–3 minutes until heated through and glossy.
  6. Spoon the stir fry over cooked rice or noodles and garnish as desired.

Notes

For a gluten-free option, use tamari-based teriyaki sauce. Adjust cooking time slightly when using chicken thighs.
