One Pot Garlic Parmesan Chicken Pasta

A quick and easy one-pot meal featuring creamy garlic Parmesan sauce with tender chicken and penne pasta.

  • 1 lb boneless, skinless chicken breasts, diced
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 4 cloves garlic, minced
  • 2 cups chicken broth
  • 1 1/2 cups heavy cream
  • 8 oz penne pasta (uncooked)
  • 1 cup freshly grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Chopped fresh parsley for garnish (optional)

Instructions

  1. Heat the olive oil and butter in a large pot over medium-high heat.
  2. Add the diced chicken, season with salt, pepper, and Italian seasoning, and sear until golden brown and cooked through, then remove from the pot.
  3. Add minced garlic to the pot and sauté until fragrant, about 1 minute.
  4. Pour in the chicken broth and heavy cream, bringing to a gentle simmer.
  5. Stir in the uncooked penne pasta, cover, and cook for 10-12 minutes, stirring occasionally until tender.
  6. Reduce the heat and mix in the Parmesan cheese until fully melted.
  7. Return the cooked chicken to the pot, and mix everything together, warming through for a couple of minutes.
  8. Garnish with fresh parsley if desired, and serve hot.

Notes

For added nutrition, feel free to substitute chicken with turkey or add your favorite veggies like spinach or broccoli.
